Sausage Spinach Frittata
Ingredients
- 6-8 large eggs
- 1/2 cup milk
- 1 tbsp butter or oil
- 1 cup ground breakfast sausage
- 1 1/2 cups baby spinach
- half small onion chopped or 3 raw green onion
- 6oz sliced baby Bella mushrooms
- 1 tsp minced garlic
- 1tsp thyme
- 1 cup of white cheddar or parm cheese
- salt and pepper to taste
Instructions
- Heat oven to 350 degrees F
- In a skillet cook your raw breakfast sausage, then transfer to a bowl to cool
- In the hot skillet add butter or oil
- Sauté mushrooms and onion until crispy and translucent. Then add garlic and baby spinach, add more butter or oil if needed, and sauté until the spinach has wilted. Transfer to the bowl with the sausage and stir to combine
- In a 9-inch pie plate crack and beat your eggs, then add the milk, salt, pepper, cheese, and thyme, whisk to combine
- Stir in your now cooled filling
- Transfer plate to the oven for 10-15 minutes or until the center is firm
