Green Waldorf Salad
Ingredients:
- 1-2 cups baby spinach (arugula or spring mix work too)
- 1/2 cup leftover grilled chicken cubed
- 1/4 cup chopped gala apple
- 1 oz crumbled goat cheese (cheddar or gorgonzola work too)
- 1/4 cup chopped walnuts
- Top with a few slices of red onion
For The Dressing:
- 1/4 cup mayo
- 1 Tbsp honey
- 1 Tbsp balsamic vinegar
- Water to thin
- salt and pepper
Instructions:
- Start by whisking all of the dressing ingredients together. Adding a small amount of water to thin it out to your preference. Set aside.
- Then layer the salad ingredients together in a bowl and top with dressing.
This is a quick salad that can be catered to your preferences! It is great alone for lunch, with half of a sandwich, or next to a main dinner.
