Green Waldorf Salad

Ingredients:

  • 1-2 cups baby spinach (arugula or spring mix work too)
  • 1/2 cup leftover grilled chicken cubed
  • 1/4 cup chopped gala apple
  • 1 oz crumbled goat cheese (cheddar or gorgonzola work too)
  • 1/4 cup chopped walnuts
  • Top with a few slices of red onion

For The Dressing:

  • 1/4 cup mayo
  • 1 Tbsp honey
  • 1 Tbsp balsamic vinegar
  • Water to thin
  • salt and pepper

Instructions:

  1. Start by whisking all of the dressing ingredients together. Adding a small amount of water to thin it out to your preference. Set aside.
  2. Then layer the salad ingredients together in a bowl and top with dressing.

This is a quick salad that can be catered to your preferences! It is great alone for lunch, with half of a sandwich, or next to a main dinner.
