The Perfect Quinoa Bowl
Ingredients:
- One large egg
- Half of an avocado sliced
- 4 Cherry tomatoes diced
- 1/2 cup dry quinoa
- 21/2 cups water
- 2 Tbsp EVOO
- 1/2 tsp thyme
- 1/2 tsp Rosemary
- Salt and pepper to taste
Instructions:
- Begin by cooking the quinoa in one cup of water over high heat. Once boiling turn the heat down to a simmer and cover for 15 minutes, or until the quinoa is cooked through.
- While the quinoa is cooking prep your tomatoes and avocado and set aside.
- With ten minutes remaining on the quinoa, we’ll poach the egg. Bring a small saucepan with another cup and a half of water to almost a boil, (this should only take a few minutes) once you start to see small bubbles form at the bottom of the pan stir the water to create a gentle whirlpool and crack the egg into the center. Let the egg cook for 6 minutes then remove with a slotted spoon. Gently place the egg on a paper towel to dry.
- Once the quinoa has fully cooked add the EVOO and seasonings, then assemble your bowl with the egg, avocado, and tomato.
- Serves one
