Turkey Chili


Ingredients:

  • 1 lb ground turkey
  • 1/2 large yellow onion diced
  • 2 cloves of garlic chopped
  • 1 red bell pepper diced
  • 1 tbsp olive oil
  • 1 tbsp tomato paste
  • 2 15 oz cans diced tomatoes
  • 1 15 oz can tomato sauce
  • 2 cup chicken broth or stock
  • 1 15 oz can dark red kidney beans
  • 1 15 oz can black beans
  • 1 15 oz can sweet corn (or 1/2 frozen bag)
  • 2 tbsp chili powder
  • 1 tbsp cumin
  • 1 tsp smoked paprika
  • 1/2 tsp red pepper flakes
  • 1/2 tsp cayenne pepper
  • 1/2 tsp oregano
  • 1/2 tsp brown sugar
  • 1/2 tsp tabasco (2-3 shakes)
  • Salt and pepper to taste
  • Avocado, sour cream, green onion, tortilla chips, cheddar cheese, jalapeno. (optional)

Instructions:

  1. Start by sautéing the diced onion, pepper, and chopped garlic (for extra heat a chopped jalapeno can be added here as well) in a large pot with the oil over medium-high heat. (6-7 minutes). Halfway through add the ground turkey and sauté until browned and cooked through.
  2. Once the turkey is finished add the tomato paste and let that cook for another 1-2 minutes.
  3. Add the diced tomatoes undrained, tomato sauce, and chicken broth and bring to a boil.
  4. Drain and rinse the beans and corn then add them to the pot as well, stirring to combine.
  5. Add all of the seasonings at this point, stir and bring the chili to a boil. Turn the heat down to a simmer for 30- 45 minutes stirring occasionally.
  6. Serve hot with desired toppings.
  7. Serves 6
