Turkey Chili
Ingredients:
- 1 lb ground turkey
- 1/2 large yellow onion diced
- 2 cloves of garlic chopped
- 1 red bell pepper diced
- 1 tbsp olive oil
- 1 tbsp tomato paste
- 2 15 oz cans diced tomatoes
- 1 15 oz can tomato sauce
- 2 cup chicken broth or stock
- 1 15 oz can dark red kidney beans
- 1 15 oz can black beans
- 1 15 oz can sweet corn (or 1/2 frozen bag)
- 2 tbsp chili powder
- 1 tbsp cumin
- 1 tsp smoked paprika
- 1/2 tsp red pepper flakes
- 1/2 tsp cayenne pepper
- 1/2 tsp oregano
- 1/2 tsp brown sugar
- 1/2 tsp tabasco (2-3 shakes)
- Salt and pepper to taste
- Avocado, sour cream, green onion, tortilla chips, cheddar cheese, jalapeno. (optional)
Instructions:
- Start by sautéing the diced onion, pepper, and chopped garlic (for extra heat a chopped jalapeno can be added here as well) in a large pot with the oil over medium-high heat. (6-7 minutes). Halfway through add the ground turkey and sauté until browned and cooked through.
- Once the turkey is finished add the tomato paste and let that cook for another 1-2 minutes.
- Add the diced tomatoes undrained, tomato sauce, and chicken broth and bring to a boil.
- Drain and rinse the beans and corn then add them to the pot as well, stirring to combine.
- Add all of the seasonings at this point, stir and bring the chili to a boil. Turn the heat down to a simmer for 30- 45 minutes stirring occasionally.
- Serve hot with desired toppings.
